Beans with rabbit

Soak the beans the day before processing. In a pan with olive oil over high heat,

pre seasoned fry the rabbit until golden, and reserve in a bowl.

Add to the pot the onion, peeled and finely chopped garlic, the diced peeled carrot, and

bay leaf.

Saute for a few minutes and add the grated tomatoes. Allow to cool and add the tomato

paprika, beans and water to cover, simmer over low heat for 1 ½ hours or

until tender.

Halfway through cooking, add the rabbit stew. Add salt to taste and sprinkle with parsley just before

serve.
